What each ingredient does

Mutton
Provides the meat and rich, savory flavor that gives the broth its body.
Onions
Add sweetness and aroma as they slowly release their flavor into the broth.
Carrots
Contribute gentle sweetness and color to the broth and serve as a side.
Turnips
Add a mild, slightly sweet flavor and aroma to the broth.
Celery
Adds aromatic, savory depth to the broth during long simmering.

The step that matters

Skimming the scum. Scum is coagulated protein and impurities that rise as the meat heats. Removing it early keeps the broth clear and clean-tasting rather than cloudy or muddy.
