Ingredients

Directions

Prepare

  1. Wash the knuckle of veal and place it in a stewpan.

  2. Cover the veal with cold water and let it simmer slowly.

Skim and season

  1. Skim the broth carefully, adding cold water once or twice to help the scum rise.

  2. After skimming, add the rice, mace, cloves, peppercorns, and the spice bag of sweet herbs.

Simmer and serve

  1. Cover and simmer for about 4 hours, stirring occasionally to prevent the rice from burning.

  2. Remove the meat and spice bag, then strain the broth into a tureen and serve.

What each ingredient does

Veal knuckle
Releases gelatin and collagen as it simmers, giving the broth body and a rich mouthfeel.
Rice
Thickens the broth slightly as its starch releases during long simmering.
Black peppercorns
Adds a sharp, warm aroma that infuses the broth during simmering.
Cloves
Contribute a strong, warm aroma that flavours the broth over the long simmer.
Mace
Adds a delicate, warm aroma that complements the veal flavour.

The step that matters

Skimming the broth. Scum made of coagulated proteins and impurities rises to the surface as the liquid heats. Removing it carefully keeps the broth clear and clean-tasting. Adding cold water helps the scum separate and rise.
