Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold joint of veal
Provides the cooked meat that forms the body of the dish.
Veal gravy or strong broth
Supplies the liquid that carries the minced meat and flavour.
Flour and butter
Thicken the liquid into a smooth, coating sauce.
Milk
Adds richness and softens the flavour of the sauce.

The step that matters

Stir over low heat without boiling. Once the thickened sauce is hot, boiling can cause the flour-thickened liquid to break or become lumpy and can toughen the minced meat, so gentle heating keeps the texture smooth and tender.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, lemon, nutmeg, milk, flour, butter, bread):

  1. Cinnamonfits better
  2. Marjoramfits better
