Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the pastry dough as directed for Coventrys, without rolling it thin.

  2. Place some Banbury-meat in the center of the dough.

  3. Fold the edges of the dough to form an oval puff, pressing more at the ends than in the center.

  4. Turn the puffs over and dust the tops generously with loaf sugar.

  5. Bake in a moderate oven at 350°F (175°C) until golden.
