Ingredients

Directions

  1. Pick, singe, and draw the birds, then bone them.

  2. Season the insides with seasoning salt and spices.

  3. Fill the birds with forcemeat to maintain their shape.

  4. Place them in a stewpan with consomme or gravy, bones, and remaining forcemeat.

  5. Add button mushrooms and truffles, then stew gently until the birds are cooked.

  6. Strain the gravy and season with cayenne, white pepper, and coarse sea salt.

  7. Let the mixture cool, then place the birds in a case.

  8. Fill any gaps with forcemeat, truffles, mushrooms, and jelly.

  9. Cover with remaining jelly and decorate with chopped aspic, croutons, lemon slices, and parsley.

  10. Prepare the case using a buttered tin mold and roll out the pastry to ½ inch thickness.

  11. Cut a strip to line the sides of the mold, pressing it into the design.
