To Blanch Almonds
Ingredients
Directions
Boil a saucepan of water.
Add the almonds and boil until the skins can be easily removed by rubbing them in your hand or squeezing one between your fingers.
Drain the water and pour cold water over the almonds.
Place the almonds on a rough cloth or sack, fold it over, and rub them well.
Check if the skins are mostly removed; if not, pick out the unblanched ones, rub them again, and fan them.
Continue this process until all almonds are blanched.
Let them dry in a warm oven before using, and keep them dry to prevent spoilage.
