What each ingredient does

Isinglass (gelatin)
Provides the protein network that sets the mixture into a firm, sliceable gel when chilled.
Cream
Adds fat and richness, giving a softer, smoother texture to the set dessert.
Strawberry jam
Supplies sweetness, fruit flavor and much of the dessert's colour.

The step that matters

Stir the dissolved isinglass through the mixture. If the isinglass is not fully dissolved or is poorly mixed in, it can form lumps or set unevenly, so the gel will be patchy rather than smooth and uniform.

Swap the strawberry jam

How well each one fits the dish's main ingredients (cream, gelatin):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
