What each ingredient does

Bacon
Melts fat that bastes the meat and adds savoury flavour as it cooks.
Onions
Soften and sweeten slowly, adding aroma to the braising liquid.
Carrots
Release natural sugars during slow cooking, adding sweetness and body.
Water or stock
Provides the moist cooking liquid that gently braises the meat.

The step that matters

Keep the heat low and the pan covered. Low, covered cooking keeps the liquid at a gentle simmer, so tough connective tissue breaks down slowly into tender meat without drying or toughening it.

Swap the onion

How well each one fits the dish's main ingredients (celery, carrot, meat):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against celery, carrot, meat. Candidates are from the same food group and used in at least 100 recipes.
