Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat; long hanging and simmering make it tender.
Port wine
Adds sweetness and depth of flavour to the sauce.
Eschalot vinegar
Adds acidity that sharpens the flavour of the sauce.
Flour
Thickens the sauce so it clings to the beef.
Butter
Adds richness and, kneaded with flour, helps thicken the sauce.
Brown sugar
Adds sweetness and helps round out the sauce's flavour.

The step that matters

Heating the sliced beef without boiling. Once the sliced beef is added, boiling the sauce can toughen the meat and make it dry. Keeping it just below a boil heats it through while it stays tender and moist.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pepper, port wine, vinegar, butter, flour, sugar):

  1. Capsicumfits better
  2. Shallotfits better
  3. Mustardfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, pepper, port wine, vinegar, butter, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
