Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal fillet
Provides the lean meat that is the centrepiece of the roast.
Fine stuffing
Fills the space left by the removed bone, adding moisture and flavour inside the meat.
Melted butter
Adds richness and moisture when poured over the finished fillet.
Ham or bacon
Adds salty, smoky fat that contrasts with the mild veal.

The step that matters

Roast until thoroughly cooked. Veal must be cooked all the way through, so the cook should check that no red juices remain. Roasting at a distance from the fire lets the heat penetrate gently instead of scorching the outside before the centre is done.

Flavor stand-ins for the cucumber

  3. Potatobetter flavor fit
  4. Cucumberthe original

Fit is the average pairing score against veal, butter, ham. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
