To Clress the Roe of Carp

Ingredients

Directions

  1. Salt the roe of carp and boil it in vinegar.

  2. Cut the boiled roe into small pieces and season with spices.

  3. Mix the seasoned roe with bread crumbs and minced lemon peel to form cakes.

  4. Place the cakes in scallop shells or a Dutch oven and heat them before the fire or bake them.

  5. For the carp, stew it with the roe, then skin the fish.

  6. Lard the fish with bits of bacon and brown it before the fire or in the oven.

  7. Remove the roe, form it into balls, and fry with forcemeat.

  8. Prepare a sauce of your choice, either white or brown, and serve it under the carp.
