Ingredients

Directions

Prepare the fish

  1. Remove the meat from the fish bones, head, and fins.

  2. Place the bones, head, and fins in a pot with 1 pint of water, 1 onion, herbs, pepper, and salt to make gravy.

  3. Mince the fish meat.

Form and fry the cakes

  1. Mix the minced fish meat with ⅓ cup of bread crumbs, minced onion, parsley, pepper, salt, and mace.

  2. Combine the mixture with 1 egg white and 2 tablespoons of melted butter to form a cake.

  3. Coat the cake with bread crumbs.

  4. Fry the coated cake until pale brown, keeping a plate on top while frying.

Stew and serve

  1. Transfer the cake to a stewpan with the fish gravy and stew gently for 30 minutes, turning it carefully to avoid breaking. Cover the stewpan while stewing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Binds the minced fish and crumbs so the cake holds its shape.
Bread crumbs
Absorb moisture and add body to the cake, and form a crisp coating when fried.
Melted butter
Adds fat and richness, keeping the cake moist and helping it brown.
Fish meat
Provides the main protein that sets into the body of the cake.

The step that matters

Turning the cake in the gravy. The cake is soft and held together only by the egg white and crumbs, so turning it gently keeps it from breaking apart while it stews in the liquid.
