What each ingredient does

Onion
Browned in butter, it adds deep savoury flavour and colour to the gravy.
Butter
Fat for frying the onion, carrying flavour and promoting browning.
Small beer
Liquid base that adds malty flavour and moisture to the gravy.
Walnut pickle
Adds concentrated, tangy, savoury flavour to the liquid.

The step that matters

Frying the onion until brown. Browning the onion in butter develops sweet, roasted flavours through the Maillard reaction. Pale onion gives a flat, weak gravy, so cook until it is properly golden brown before adding it to the liquid.
