A Rich Gravy

Ingredients

Directions

  1. Fry the sliced beef and onions in flour until light pale brown, avoiding blackening.

  2. Transfer the browned mixture to a stewpan and pour boiling water over it.

  3. Bring to a boil and pour over the meat.

  4. Add the parsley, thyme, savory, marjoram, tarragon, mace, allspice, black peppercorns, cloves, and ham.

  5. Simmer until all juices are extracted from the meat, skimming frequently.
