Prawn Curry

Ingredients

Directions

Make the curry base

  1. In a stewpan, melt the butter over medium heat.

  2. Add the chopped onion and curry powder; sauté until the onion is soft.

  3. Stir in the prawns and cook for a few minutes.

Add the spinach and finish

  1. In a separate saucepan, add the washed spinach without water and cook until wilted.

  2. Press the liquid from the spinach and add it to the stewpan with the prawns.

  3. Stir well, adding a little water if necessary to prevent burning.

  4. Let the mixture stew for a few minutes to combine the flavors.

What each ingredient does

Prawns
Provide the main protein, becoming firm and opaque once cooked through.
Butter
Carries the curry powder's flavor and adds richness to the sauce.
Onion
Softens and sweetens as it cooks, forming the body of the curry base.
Curry powder
Supplies the spice aroma that defines the dish, bloomed in fat to release flavor.
Spinach
Adds leafy vegetable body and moisture that thickens the finished curry.

The step that matters

Stirring in the spinach liquid and water to prevent burning. Curry powder and onion can scorch on direct heat and stick to the pan, giving a bitter taste. Stirring often and adding a little water keeps the spices from burning while the mixture combines.
