  2. Wipe the links.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Blood
Binds the filling and sets into a firm, rich body when cooked.
Grits
Absorbs liquid and gives the filling a firm, slightly grainy texture.
Bread crumbs
Soaked in milk, they add moisture and help bind the filling.
Beef suet
Adds fat that keeps the filling moist and rich after cooking.
Eggs
Bind the herbs, suet and filling together so it holds its shape.
Hog's fat
Melts during cooking, adding pockets of fat that keep the filling moist.

The step that matters

Prick the links as they swell. Filling expands as it heats and steam builds inside the casing. Pricking lets steam escape, so the skins do not burst.

Swap the clove

  1. Marjoramfits better
