Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt
Preserves the beef and seasons it through the curing brine.
Saltpetre
Helps keep the cured meat pink and adds to its preserving effect.
Sugar
Balances the salt and adds mild sweetness to the cured beef.
Beef
The main cut that is cured in the brine and then baked until tender.
Suet
Adds fat to the pan, keeping the beef moist as it bakes.

The step that matters

Turning the beef in the brine every day. Brine must reach every part of the meat, and daily turning keeps the salt and spices evenly distributed while the beef cures over 14 days.

Swap the clove

How well each one fits the dish's main ingredients (sugar, allspice, beef):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Clovethe original
  4. Gingerfits about as well

Fit is the average pairing score against sugar, allspice, beef. Candidates are from the same food group and used in at least 100 recipes.
