Cold Macaroni

Ingredients

Directions

  1. Boil the macaroni in weak veal broth until soft, adding salt for seasoning.

  2. Drain the macaroni and place it on a dish.

  3. Add small bits of butter and grated cheese on every layer.

  4. Top with more grated cheese and butter.

  5. Place the dish in a Dutch oven for 1 hour, ensuring the cheese does not harden.

  6. If warming dressed macaroni, simmer gently in broth with 2 egg yolks to thicken, then bake in a mold covered with bread crumbs.
