What each ingredient does

Ground rice
Thickens the liquid into a soft, smooth porridge-like body as it cooks.
Carolina rice
Softened, pushed through a sieve and simmered, it gives body and a fine, pulpy texture.
Milk
Provides moisture and richness, carrying the flavour and softening the thickened mixture.
Sugar
Adds sweetness and helps balance the tartness of the lemon and brandy.
Brandy
Adds aroma and warmth to the flavour of the dish.

The step that matters

Simmer until it can be pushed through a sieve. Starches gelatinise and soften as rice cooks, so the rice must be tender enough to pass through a sieve smoothly. Undercooked grains leave grit, while overcooking can make the mixture pasty.
