Crust for Raised Pies

Ingredients

Directions

  1. Boil water with lard and butter until hot.

  2. Mix in enough flour to form a stiff, smooth paste.

  3. Knead and beat the paste with a rolling pin until smooth.

  4. Soak a lump of paste in a cloth until nearly cold.

  5. Shape the paste to hold the meat together, keeping it moderately warm.

  6. Place the meat in the pie, cover with the lid, and decorate the top with paste.

  7. Glaze the pie with egg white before baking.

  8. For easier handling, roll out the paste, cut out top and bottom, and form sides, sealing with egg. Fill and cover the pie, pinching edges together.
