Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Veal gravy
Provides the meaty flavour and the liquid base for the gelatin.
Whites of eggs
Bind impurities during clarifying so the finished liquid turns clear.
Tarragon vinegar
Adds acidity and a sharp tarragon aroma to balance the rich gravy.

The step that matters

Clarify the mixture with the whites of 6 eggs. Egg whites must be whisked in and heated gently so they coagulate and trap particles; if the mixture is stirred too hard or boiled hard at this point, the clarifying raft breaks up and the jelly stays cloudy.
