Game Puddings

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, make a batter with flour, milk, eggs, pepper, and salt.

  3. Pour a little batter into the bottom of a pudding dish.

  4. Place seasoned poultry or game and shredded onion into the dish.

  5. Pour the remaining batter over the top.

  6. Bake in the oven until set.

  7. For a dumpling, stuff the chicken or game with chopped oysters.

  8. Lay it on its back in the paste and place a bit of butter rolled in flour on the breast.

  9. Close the paste to form a dumpling and boil in hot water for 2 hours.
