Apple or Gooseberry Souffle

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

  1. Scald and sweeten the fruit, then beat it through a sieve into a tart dish.

  2. Once cold, pour a rich custard over the fruit, about 2 inches deep.

  3. Whip the egg whites until stiff peaks form and place them in small rough pieces on top of the custard.

  4. Sift fine sugar over the top and bake in a cool oven (300°F / 150°C) for a short time.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
