Why it works: Beef and carrot are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 6,606 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Boiling Meat

Ingredients

Directions

Cook the beef

  1. Place the beef joint in a pot and cover with water.

  2. Heat gradually for 40 minutes to 1 hour until it begins to boil.

  3. Skim off any scum that rises to the surface.

  4. Once no more scum rises, cover the pot and let it boil gently.

  5. Cook for about 3 hours for a 15-16 pound joint, or 2 hours for a 10 pound joint.

Finish and serve

  1. When done, pour 1-2 cups of the boiling liquid over the meat to clean it.

  2. Garnish with sliced carrots and serve with additional vegetables and melted butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef joint
Provides the main protein; slow, gentle boiling tenderises its connective tissue into a moist, tender texture.
Melted butter
Adds richness and fat to the meat when served, contributing moisture and flavour.

The step that matters

Skimming the scum. Foam and impurities rise to the surface as the water heats. Removing them before the pot reaches a gentle boil keeps the broth clear and the flavour clean.

Swap the carrot

How well each one fits the dish's main ingredients (beef, butter):

  1. Potatofits better
  2. Onionfits better
  3. Chivefits better
  4. Carrotthe original

Fit is the average pairing score against beef, butter. Candidates are from the same food group and used in at least 100 recipes.
