Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's head
Forms the main body of the dish and is cooked whole until tender.
Butter
Adds richness and a smooth, silky texture to the chopped brains.
Brains (in the method)
Become a soft, creamy base when chopped and gently warmed with butter.
Parsley
Adds fresh, herbal aroma that brightens the rich butter and brains.

The step that matters

Warming the brain mixture. Over high heat the butter can separate and the brains can toughen or scorch, so gentle low heat with stirring keeps the sauce smooth and creamy.

Swap the broccoli

How well each one fits the dish's main ingredients (parsley, butter, ham, pork, potato):

  1. Onionfits better
  2. Carrotfits better
  3. Chivefits better
  4. Broccolithe original

Fit is the average pairing score against parsley, butter, ham, pork, potato. Candidates are from the same food group and used in at least 100 recipes.
