Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Provide the main bulk and sweet, mild flavour of the sauce.
Butter
Adds richness and fat, carrying flavour and giving a smooth mouthfeel.
Milk
Forms the liquid base that gives the sauce its creamy body.
Flour
Thickens the milk and butter so the sauce becomes smooth and coats the onions.

The step that matters

Squeeze the onions dry. Excess water from boiled onions would dilute the milk and flour mixture and leave the sauce thin and watery, so the onions must be pressed dry before they are added.

Swap the onion

How well each one fits the dish's main ingredients (milk, butter, flour):

  1. Potatofits better
  2. Arrowrootfits better
