What each ingredient does

Salmon
Is the main protein; cooking it gently in water turns its flesh firm and flaky.
Coarse sea salt
Seasons the fish and firms its flesh during the saltwater soak.
Vinegar
Rubbed inside the fish, it adds a sharp note that brightens the mild flesh.

The step that matters

Reduce the heat to a slow boil. Once the fish is in, a hard rolling boil can break up the flesh and toughen it. Keeping the water at a gentle simmer cooks the salmon evenly and keeps it moist and tender.
