Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Veal Cutlets

Ingredients

Directions

Prepare

  1. Dust the veal cutlets with flour on both sides.

  2. For a variation, dip cutlets in egg, coat with bread crumbs mixed with crumbled herbs, salt, and pepper, then fry.

Cook

  1. Fry the cutlets until brown on both sides, turning them two or three times.

  2. Cook for about 15 minutes over a strong fire or 20 minutes over a moderate fire.

  3. If cutlets are thicker than ½ inch, cook them more slowly and for a longer time.

Serve

  1. Serve with gravy, garnished with lemon slices and optional rashers of ham, bacon, or fried sausages.

Flour and egg barely smell alike, yet cooks put them together in 106,462 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Provide the meat that browns and becomes tender when fried.
Flour
Dries the surface and helps the cutlets brown evenly.
Egg
Acts as a binder so the bread crumbs stick to the cutlets.
Bread crumbs
Form a crisp, golden coating when fried.

The step that matters

Cook thicker cutlets more slowly. Thick cutlets can brown on the outside before the centre is cooked through. Lower heat and longer cooking let heat reach the middle while the surface stays browned rather than burnt.
