What each ingredient does

Veal trimmings
Provide meaty flavour and body to the stock that becomes the gravy.
Butter
Carries the flour into a paste and adds richness to the gravy.
Flour
Thickens the gravy when cooked in fat and stock as a roux.
Onion
Adds aromatic sweetness and depth to the simmered stock.

The step that matters

Stir the paste over heat. Cooking the flour and butter paste for a few minutes cooks out its raw starchy taste and helps it thicken smoothly rather than leaving the gravy pasty.

How well each one fits the dish's main ingredients (veal, thyme, parsley, lemon, butter, flour):

  1. Shallotfits better
  2. Leekfits better
