What each ingredient does

Sage leaves
Provides the herbal, aromatic flavour that defines the sauce.
Onion
Adds savoury sweetness and aroma as it softens in the water.
Grated bread crumbs
Thicken the sauce and give it body as they absorb liquid.
Melted butter or gravy
Adds fat and richness, carrying flavour and smoothing the sauce.

The step that matters

Stirring while the sauce simmers. Once the bread crumbs and butter or gravy are in, the sauce can scorch on the bottom of the pan and thicken unevenly. Constant stirring keeps heat even and the crumbs dispersed, giving a smooth, uniform texture.
