What each ingredient does

Beef leg or shin
Provides the main protein, and its connective tissue softens into tender meat and gelatin over long simmering.
Turnips
Add mild sweetness and body to the broth as they cook down.
Carrots
Add natural sweetness and color to the broth.
Onions
Add savory depth and aromatic flavor to the broth.
Celery
Adds a fresh, savory aroma that rounds out the broth.

The step that matters

Skimming the scum as it comes to a boil. Scum is coagulated protein and impurities released from the meat. Removing it early keeps the broth clear and clean-tasting rather than cloudy or greasy.
