Barley Broth

Ingredients

Directions

Prepare the broth

  1. Wash the barley well in cold water.

  2. In a stewpan, combine the beef, barley, and cold water.

  3. Set over low heat and bring to a boil, skimming off any scum.

  4. Add the onion, turnip, celery, white pepper, and salt.

  5. Cover and let simmer slowly for 4 hours, stirring occasionally.

Make the sauce and serve

  1. Remove the meat and keep it warm.

  2. Skim the fat from the broth and pour it into a tureen.

  3. For the sauce, thicken ½ pint of broth with 2 teaspoons of flour, cayenne pepper, and ketchup.

  4. Simmer the sauce gently, stirring until it boils, then pour it over the meat.

What each ingredient does

Scotch barley
Swells during long simmering, thickening the broth and giving it body.
Leg of beef
Releases flavour and gelatin into the broth during the long, slow simmer.
Ready-browned flour
Thickens the sauce so it clings to the meat instead of running off.
Ketchup
Adds sweetness and acidity that rounds out the sauce's savoury flavour.

The step that matters

Skimming off the scum. Scum that forms as the liquid first boils is coagulated protein and impurities. Removing it early keeps the broth clear and clean-tasting.

Swap the white pepper
