What each ingredient does

Marrow
Forms the main body of the dish, cooking to a tender interior inside its crisp coating.
Egg
Acts as a binder so the bread crumbs adhere to the marrow slices.
Bread crumbs
Form a golden, crisp coating that browns during frying.
Butter
Conducts heat for frying and adds richness and browning to the crumb coating.

The step that matters

Fry in butter until light brown on both sides. Medium heat browns the crumb coating through Maillard reaction while the marrow heats through. Too much heat burns the butter and crumbs before the slices are cooked.
