Ingredients

Directions

Make the sauce

  1. Combine mushroom broth, milk, onion pieces, and mace in a saucepan and boil for 10 minutes.

  2. Mix flour and butter together, then stir into the boiling mixture until it thickens.

  3. Remove from heat and strain through a fine sieve back into the pan.

Finish the sauce

  1. Add a little salt and lemon juice.

  2. Beat the egg yolks and mix with the cream, then strain into the sauce.

  3. Stir over low heat, ensuring it does not boil to prevent curdling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the liquid into a smooth, coating sauce as it cooks.
Butter
Carries flavour and enriches the sauce, helping it feel smooth on the palate.
Egg yolks
Add richness and further thicken the sauce when gently heated.
Cream
Adds fat and richness, giving the sauce a softer, silkier texture.
Mushroom broth
Forms the savoury liquid base that the sauce is built on.

The step that matters

Stir over low heat without boiling after adding the egg yolks. Egg yolk proteins set when overheated, so the sauce can curdle or turn grainy if it boils. Gentle heat keeps it smooth and thick.

Swap the mace
