What each ingredient does

Raspberries
Provide the main flavour and colour, and release juice when bruised and steeped.
Vinegar
Adds acidity that sharpens the fruit flavour and helps preserve the finished syrup.
Loaf sugar
Sweetens the mixture and thickens it into a syrup as it dissolves in the juice.

The step that matters

Straining the fruit and vinegar over the sugar. Pressing too hard through the jelly bag can push pulp and seeds into the syrup, making it cloudy. Letting the juice drip through gives a clearer result.
