What each ingredient does

Coarse flake bran
Adds fiber and a coarse, hearty texture to the loaf.
American flour
Forms the gluten network that gives the bread its structure.
Yeast
Produces gas that makes the dough rise and become airy.

The step that matters

Boiling the bran until smooth. Bran left in coarse pieces can cut through gluten strands and weaken the dough. Boiling softens it so it blends into the water evenly, giving a more uniform crumb.
