What each ingredient does

Hare blood
Thickens the soup and gives it a rich, dark colour and savoury body.
Rice
Browned rice adds a toasted aroma and helps thicken the broth.
Cold-meat bones
Release flavour and gelatin into the water, building the body of the stock.
Hare meat
Provides the main meat and savoury flavour of the soup.

The step that matters

Adding the blood to the rice. Blood thickens and can curdle if it gets too hot or boils too fast. Adding it cold and stirring constantly keeps it smooth and evenly blended into the soup.
