Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal shank
- Releases gelatin and flavor into the water, giving the soup body and richness.
- Whole rice
- Cooked until tender, then pulped, it thickens the soup and gives it a smooth texture.
- Egg yolks
- Stirred in at the end, they enrich the soup and add richness and a silky texture.
The step that matters
Stir in the egg yolks just before serving. Egg yolks thicken when heated, so if the soup is too hot or boils after they go in, they can scramble and turn grainy. Adding them off the heat keeps the texture smooth.
