What each ingredient does

Old green peas
Break down into a thick, smooth base that gives the soup its body.
Onions
Frying until golden adds sweetness and savory depth to the soup.
Butter
Adds richness and a silky mouthfeel to the finished soup.
Young green peas
Stay firm and tender, adding fresh pea flavor and texture to the soup.
Lettuce
Softens as it cooks, adding mild body and a gentle vegetal sweetness.

The step that matters

Pulping the cooked old peas. Pushing the soft peas through a sieve removes skins and fibres, giving the soup a smooth texture. Peas must be cooked fully soft first, or the pulp will be grainy and hard to press through.
