Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Give the soup its colour, body and natural sweetness once pounded and sieved.
Turnips
Add body and a mild sweetness to the pureed vegetables.
Shin of beef
Builds the rich flavour and gelatin body of the stock.
Sweet herbs
Add aromatic flavour to the stock.

The step that matters

Removing the fat from the stock. Fat left on the surface of the stock makes the soup greasy and heavy on the palate. Chilling the stock after straining lets the fat solidify so it can be lifted off cleanly.

Swap the clove

How well each one fits the dish's main ingredients (beef, ham, veal, onion, carrot, pepper, turnip):

  1. Celeryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Clovethe original
