Turtle Soup

Ingredients

Directions

  1. Cut off the turtle's head and hang it until the next day.

  2. Open the turtle, draining all blood and water.

  3. Remove the flesh from the spine and legs, avoiding the gall, then wash and drain the meat.

  4. In a large pot of boiling water, cook the breast shell until the plates separate easily.

  5. Boil the back and belly until the softer parts can be removed, then cool them separately.

  6. In a large stew pan, layer ham, veal, turtle flesh, and legs.

  7. Add a bunch of sweet herbs and a clove-studded onion.

  8. Moisten with the boiling water from the shell and the cooking liquid from the back and belly.

  9. Once the legs are tender, remove them and set aside for the sauce.
