Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main body and flavour of the fritters.
Boiled potatoes
Bind the mixture and give the fritters a soft, tender interior.
Egg yolk
Binds the mixture and adds richness to the fritters.
Butter
Adds fat and richness to the sauce.
Flour
Thickens the sauce so it becomes smooth and coats the food.

The step that matters

Frying the fritters until light brown. Frying in hot fat browns the surface and gives a crisp exterior, while the moist interior cooks through. Too little heat leaves them greasy and pale; too much burns the outside before the centre is hot.

Swap the potato
