To Pry Small Fresh Haddocks

Ingredients

Directions

  1. Clean and scrape the scales off the haddocks; cut off the fins and tails. You can remove the heads or leave them on.

  2. Wipe the fish dry, rub them with the beaten egg yolk, and dust with flour.

  3. Fry the haddocks in boiling lard or beef dripping until one side is brown, then turn them over.

  4. Once cooked, place the haddocks on a sieve in front of the fire to drain.

  5. Garnish with fried parsley.
