Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 400°F (200°C).

  2. Rub butter over a round or square paper case according to the dish size.

  3. Boil the herrings until done, then carefully remove the roes.

  4. Place the roes whole into the paper case.

  5. Sprinkle with pepper, coarse sea salt, grated bread, and chopped parsley.

  6. Add small bits of butter on top.

  7. Bake in the hot oven until firm.

  8. Add Maitre d’ Hotel Sauce Maigre and lemon juice before serving hot.
