Dressed Crabs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the crab meat

  1. Boil the crabs.

  2. Break the claws and carefully pick out all the meat, including the roe.

  3. Mince the meat and season it with grated nutmeg, white pepper, coarse sea salt, white wine, and a little vinegar.

  4. Mix in a few bread crumbs and a good amount of butter.

  5. Heat the mixture in a saucepan, stirring constantly until thoroughly heated.

Fill and bake

  1. Fill the cleaned shells with the mixture, with or without puff pastry around the edge.

  2. Brown the filled shells in a 400°F (200°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crabs
Provide the main meat that forms the filling's body and flavour.
Bread crumbs
Absorb moisture and bind the minced meat so the filling holds together.
Butter
Adds richness and moisture to the filling and carries flavour.
White wine
Adds acidity and aromatic depth that brightens the rich crab mixture.

The step that matters

Heat the mixture until thoroughly heated. Stirring constantly over gentle heat keeps the butter and crab proteins from scorching or sticking, while bringing the whole filling evenly to temperature before it goes into the shells.

Swap the white pepper
