Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the prawns or shrimps and remove them from their shells.

  2. Season with grated nutmeg, grated lemon peel, white pepper, and coarse sea salt.

Pack and bake

  1. Pack them tightly into a jar and place a thin layer of butter on top.

  2. Cover with paper and bake at 400°F (200°C) for 8 to 10 minutes.

  3. Once cooled, pour clarified butter over them.

Butter
Adds richness and moisture, coating the shellfish and keeping it from drying out.
Clarified butter
Forms a pure fat layer on top that seals the prawns and preserves them.
