Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the main body of the dish, becoming tender and flavourful as it simmers slowly in water.
Carrots
Add sweetness and aroma to the cooking liquid as they boil with the beef.
Turnips
Add mild sweetness and earthy aroma to the cooking liquid as they boil with the beef.

The step that matters

Skimming the scum after boiling. Scum rising to the surface of the water is made of coagulated proteins and impurities. Removing it as the pot comes to a boil keeps the broth clear and the beef's flavour clean.

Swap the turnip

How well each one fits the dish's main ingredients (beef, carrot, vinegar, pepper, tea):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Turnipthe original

Fit is the average pairing score against beef, carrot, vinegar, pepper, tea. Candidates are from the same food group and used in at least 100 recipes.
