What each ingredient does

Beef
Provides the main body and savoury meat flavour of the dish.
Onions
Add sweetness and savoury depth as they soften and brown with the meat.
Butter
Adds fat and richness and helps brown the meat and onions.
Flour
Thickens the cooking liquid into a light sauce as it heats.
Mushroom catsup
Adds concentrated savoury, umami flavour to the finished sauce.

The step that matters

Browning the meat and onions. Cooking the minced meat until light brown develops savoury flavours through the Maillard reaction. Pale, steamed meat tastes flat, so it should colour before liquid is added.

Swap the onion

  1. Shallotfits better
  2. Capsicumfits better
