To Broil Beef-steaks

Ingredients

Directions

  1. Cut the steaks from the rump or ribs of a fore-quarter.

  2. Beat the steaks well with a rolling pin.

  3. Preheat a clean gridiron over a clear, hot fire.

  4. Place the steaks on the gridiron and turn them constantly with meat tongs until cooked to your liking.

  5. Sprinkle a little coarse sea salt over the steaks just before removing them from the fire.

  6. Serve the steaks hot, plain, or with made gravy and sliced onion, or rub a bit of butter on them just before serving.

  7. Garnish with bits of fat cooked separately to avoid smoking the meat.
