Leg of Mutton Stuffed

Ingredients

Directions

Prepare and stuff the mutton

  1. Bone the leg of mutton and remove all fat, keeping the skin whole.

  2. Mince the meat with ⅓ cup fat bacon and some parsley; season well.

  3. Stuff the skin with the mixture and sew it closed.

Stew and glaze

  1. Wrap the stuffed leg in a cloth and place it in a stew-pan with slices of veal, chopped carrots, onions, parsley, and green onions.

  2. Cover with thin slices of fat bacon and stew for about 4 hours.

  3. Drain the liquid through a silk sieve.

  4. Reduce the drained liquid to a glaze.

  5. Glaze the leg of mutton with the glaze.

Make the haricot bean sauce

  1. For the haricot beans, soak 1 quart of beans in water for 3 hours.

  2. Boil the beans in cold soft water with a bit of fresh butter.

  3. Fry a large minced onion in 2 ounces of butter until done.

  4. Add 1 tablespoon of flour and moisten with good gravy.

  5. Add some haricot beans and rub through a sieve.

  6. Season the sauce with pepper and salt.

  7. Drain the beans.

  8. Mix the sauce with the drained beans.

What each ingredient does

Leg of mutton
Forms the main meat that is stuffed, stewed and glazed for a rich, tender centre.
Fat bacon
Adds fat and savoury flavour to the stuffing and moistens the meat as it stews.
Haricot beans
Are puréed into the sauce, giving it body and a thick, creamy texture.
Butter
Enriches the onion base and the beans, adding richness and a smooth mouthfeel.
Flour
Thickens the onion and butter base so the gravy-based sauce holds together.
Veal slices
Add gelatin and savoury depth to the stewing liquid that becomes the glaze.

The step that matters

Reducing the stock to a glaze. Reduction concentrates the gelatin and flavour of the strained liquid; if it is not reduced far enough the glaze stays thin and will not cling to the meat.
